Butternut Squash Ravioli with a Garlic Spinach Wine Sauce
Trader Joe’s Inspired Recipe
If you have never had Trader Joe’s Butternut Squash Ravioli, I highly recommend you try them out. They are so good. Adding them to this sauce makes them even more desirable.
When my husband and I were on our honeymoon, we had a similar dish. Ever since then I was on the hunter for butternut squash ravioli so that I could attempt to make the dish. When I found out Trader Joe’s had them, I was beyond excited.
This dish is great because it is so easy to make. It is a great weeknight dinner that you can put together in 20 minutes, and everyone will love it.
What you will need for the Butternut Squash Ravioli and Garlic Spinach Wine Sauce
- 2 Packs of Trader Joe’s Butternut Squash Ravioli
- A 6oz Bag of Spinach
- 1 Stick of Butter
- 1 Cup of Walnuts (Chopped or Halved)
- 1 Cup of White Wine ( You can find Cheap Wine From Trader Joe’s, the one I used was $3.99)
- 1 1/2 Tbsp of Flour
- 2 Tsp Minced Garlic
- 1/2 Cup Pasta Water
How to make the dish
Start by boiling a large pot of water over high heat. Salt the water while it is heating up. In a separate saucepan over medium heat, melt 1 stick of butter. When the butter is melted, add in the garlic and the walnuts. Cook for about 5 minutes or until walnuts have softened. Sprinkle in 1 1/2 Tbsp of flour into the butter and garlic and stir until combined. Add the wine and the spinach and cook until the spinach is wilted, about 4 minutes, stirring occasionally.
Once the water is boiling, cook the butternut squash ravioli as directed on the package. Once done, strain and transfer into the garlic and spinach wine sauce. Take 1/4 cup of the pasta water, and add it to the ravioli and the sauce. Allow to cook together for a few minutes. Serve with parmesan cheese and enjoy!
