Creamy Bang Bang Shrimp

These bang bang shrimp are to die for. They are crispy, creamy, tangy and oh so delicious.

My in-laws own a fish market in Indiana, so they have the hook-ups on the seafood. Every time they visit, they bring us a big box of shrimp. Which means we get to experiment with shrimp recipes all the time. I made this Bang Bang shrimp for the first time a few weeks ago, and my husband keeps requesting that I make it. He requested that I make this at least once a week from here on out. We have plenty of shrimp, so I might just do so.

Ingredients

  • 2 lbs peeled and deveined shrimp
  • Panko breadcrumbs
  • Flour
  • Onion Powder
  • Garlic powder
  • Paprika
  • Buttermilk (you can make your own with regular milk and vinegar)
  • Sweet Thai chili sauce
  • Mayonnaise
  • Plain Greek Yogurt (or sour cream)
  • Canola oil

Recipe Tips

  • Rinse and pat dry the shrimp before putting it in the batter. For best results, you can let the shrimp soak for 20 minutes in batter in the fridge. I am too impatient so I usually skip that.
  • After battering and breading the shrimp, let the shrimp sit in the fridge covered for at least 20 minutes. This allows the breading to stick together better when frying
  • For a healthier version, you can forgo the mayonnaise and just use plain greek yogurt as the sauce base. I like the taste the mayonnaise gives it, so I usually use it.

Preparing the Shrimp

First combine the buttermilk, spices, and flower to create the batter. Pat dry the shrimp and toss them in the batter. Make sure each shrimp is completely coated. Transfer the shrimp from the batter to the bread crumbs. Make sure you get a good coating on the shrimp. Use your hands to pack the breading on the shrimp. Place on a separate plate. When all of the shrimp are done, place plastic wrap around them and put them in the fridge for 20 minutes. This allows the breading to set around the shrimp.

Bang Bang Shrimp Battering and Breading

While the shrimp is setting in the fridge. Prepare the oil. You will need different amounts of oil depending on the size of the pan you use. You will want to make sure you cover the bottom of the pan in about 1/2 inch of oil. Heat the oil over medium heat until the temperature reaches 350 degrees. Once the oil is hot, and shrimp is set, you are ready to fry.

You will want to fry a few shrimp at a time so that they are not overcrowded in the pan. Keep the shrimp about an inch or so apart from each other. Fry on each side for about 3 minutes or until golden brown. If it takes much longer than 3 minutes your oil is not hot enough. If it takes less than 2 minutes, then your oil might be too hot. The breading will soak up some of the oil, so you may need to add more in from time to time. Do this between fry’s and allow it to heat all the way back up again before adding more shrimp.

When the shrimp comes out of the pan, place it on a clean plate with a paper towel underneath them to soak up any excess oil.

Making the Sauce

This sauce is extremely easy to make. It is just 4 ingredients, mayo, plain greek yogurt, Thai Chili Sauce, and Sriracha. Combine all of the ingredients together and toss the shrimp in it.

Ingredients
  

Shrimp

  • 2 lbs Shrimp

Batter

  • 2 Cup Buttermilk You can make your own using regular milk and vinegar. Mix together 1 tbsp of vinegar for 1 cup of milk.
  • 2 Eggs Beaten
  • 1 Cup Flour
  • 1 1/2 Tsp Salt
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Paprika
  • 1/2 Tsp Black Pepper

Breading

  • 2-3 Cups Panko Bread Crumbs

Bang Bang Sauce

  • 1/2 Cup Mayonnaise
  • 1/2 Cup Greek Yogurt
  • 1/2 Cup Thai Chili Sauce
  • 1 1/2 Tbsp Sriracha Sauce You can add more if you like it more spicy

Instructions
 

  • In a small bowl, mix together mayonnaise, greek yogurt, Thai chili sauce, and sriracha with a whisk and set aside in fridge.
  • Rinse and pat dry the shrimp.
  • In a separate medium sized bowl, mix together the buttermilk, flour, seasonings, and egg. Place the shrimp in the batter mix and make sure they are completely covered.
  • Take the shrimp from the batter mixture and place it in the bread crumbs. Pack the bread crumbs around the shrimp. Place the breaded shrimp on a plate and cover with plastic wrap. Place the breaded shrimp in the fridge. Let them rest for 20 minutes, this allows the breading to set and stick to the shrimp better.
  • In a medium frying pan, heat oil over medium heat. If you have a thermometer, the oil should be about 350 degrees. Place a few shrimp in the oil at a time, being sure not to crowd the pan. Cook shrimp on each side for 2 minutes, or until golden brown. If it takes much longer than 2 minutes, your oil may not be hot enough. When shrimp are done transfer to a plate with a paper towel underneath to absorb any extra oil.
  • When shrimp is done, toss it in the bang bang sauce and serve.
