Sweet Corn, Burrata & Basil Ravioli with Romesco Sauce

I do not go to Trader Joe’s often, because there is not one super close to my house. But when I saw these sweet corn, burrata & basil ravioli online, I knew I had to make a special trip to try these out.
I am a new mom and do not have a whole lot of time to make dinner, but I love to cook and I am quite the foodie. I am always trying to think of new recipes that are quick and easy but also delicious. This Sweet Corn, Burrata & Basil Ravioli with Romesco Sauce could not be any easier, and it does not disappoint.
While I was shopping at Trader Joe’s today, I learned that if you buy something and do not like it, they will refund your money completely. The lady at the cash register mentioned that when I asked if she had tried the ravioli. She had not tried them yet but mentioned she was going to now. They have a money-back policy to encourage people to try new things at their store. I think that is a great way to get people to go out of their comfort zone.
Ingredients for the dish
- 2 Packs of Sweet Corn, Burrata & Basil Ravioli from Trader Joe’s
- 1 Container of Romesco Dip from Trader Joe’s
- 1 Can of Sweet Corn
- 2 Tbsp of Olive Oil
- Parmesan and Basil to Garnish
How to Prepare the Dish
In a large pot, boil 6 quarts of water. Season water with salt. Once the water comes to a boil, add the ravioli to the pot and immediately reduce to a simmer. Allow ravioli to cook for 6 minutes. Make sure you continue to stir the ravioli so that they do not stick together.
While the ravioli is cooking. Heat a large saucepan to medium heat, and add the olive oil. Once the pan and oil are hot, add the sweet corn and cook corn for about 3 minutes. Add the Romesco Dip to the corn.
While the pasta is cooking, scoop about a cup of pasta water and put it in the Romesco sauce and stir it together. When the pasta is done, scoop it out using a strainer and place it in the Romesco sauce. Carefully stir the pasta to cover the ravioli in the sauce being careful not to break or tear them.
Plate the ravioli and garnish with grated parmesan and fresh basil leaves.
Sweet Corn, Burrata & Basil Ravioli with Romesco Sauce
Equipment
- 1 Large Pot
- 1 Large Saucepan
- Strainer/Colander
Ingredients
- 2 packages Trader Joe's Sweet Corn & Burrata Ravioli
- 1 container Trader Joe's Romesco Dip
- 1 can Sweet Corn rinsed and drained
- 2 tbsp olive oil
- 1 cup pasta water
- 1 tbsp salt
- 4 quarts water
- Basil leaves and parmesan cheese for garnish
Instructions
- Heat a large pot over high heat filled with 4 quarts of water. Bring water to a boil.
- Once the water is boiling, add the ravioli to the pot. Allow the ravioli to cook for 6 minutes. Stir occasionally to keep the ravioli from sticking together.
- While the ravioli is cooking, heat a large saucepan to medium heat and add the olive oil. Rinse and drain the corn, then add it to the pan with the olive oil.
- Allow the corn to cook for 2 minutes, then add the romesco dip.
- Add 1 cup of pasta water to the romesco dip. Stir together and allow the sauce to simmer.
- When the pasta is done, scoop the pasta out with a strainer and add it to the romesco sauce. Stir the pasta gently to make sure the pasta does not tear.
- Plate the pasta and add the parmesan and basil leaves to garnish.
