Refreshing Cucumber Pineapple Salad
If you are looking for a great light and refreshing summer salad, this cucumber pineapple salad may be your new favorite. I love pineapple, especially when it is fresh and juicy. When you pair it with cucumbers and cilantro, it cuts through some of the acidity and makes it even more delicious. This salad is great for summertime bbq’s or potlucks. It only takes a few minutes to prepare and is a guaranteed crowd pleaser. My favorite thing to pair this with is chicken street tacos.
Ingredients for the Cucumber Pineapple Salad
- 1 pineapple
- 1 Large English Seedless Cucumber
- Cilantro
- Honey
- Lime
Start by cutting the pineapple to small chunks. Cut the cucumber into 1/4 in thick slices, then quarter those slices. Chop up a quarter cup of cilantro.
For the dressing you will want to juice two limes in a small bowl and mix in 2 Tbsp of honey and a dash of salt and pepper. Once that is completely combined, drizzle it over the salad and toss it all together.
Thats’s it! Now it’s ready to enjoy. If you’d like to add a little heat or flare to the dish you can chop of some jalapeños or red onions and toss those in as well.

- Large Bowl
- Small Bowl
- Mixing Spoon
Ingredients
- 1 Pineapple
- 1 English Cucumber
- 1 Lime Juiced
- 1/4 cup Chopped Cilantro
- 2 tbsp Honey
- Pinch of salt and pepper
Instructions
- Cut the pineapple into chunks. Cut cucumber into 1/4 inch slices, then quarter those slices. Chop the cilantro
- Add pineapple, cucumber, and cilantro into a large bowl.
- In a small bowl mix together the honey, juice from a lime, and a dash of salt and peper.
- Pour the lime juice mixture over the pineapple and cucumber. Toss everything together and enjoy.
